Q: What are the usual freezing methods and how do they differ?
A: There are two methods for freezing fish: land freezing (done in processing plants) and sea freezing (done on board fishing vessels). In sea freezing, the fish is caught and frozen while it is still fresh and alive on the boat. In contrast, land freezing involves the fish being processed and then soaked in ice water before freezing. These different methods can have varying impacts on the quality of the fish
