Color of the pacific saury is dark green to blue on the dorsal surface, silvery below, and there are small, bright blue blotches distributed randomly on the sides. Since the Edo period (the 1700s), pacific saury has been loved for its flavor and reasonable pricing. Salt-grilling is the most common preparation method for pacific saury in autumn. Grilled pacific saury is usually served with grated Daikon radish and a slice of citrus fruit such as Sudachi or lemon to be squeezed right before consumption.
Pacific Saury (Kkongchi 꽁치) also called Mackerel Pike is a small, silvery-blue fish mackerel, popular in Asian cuisine. Chinese frozen pacific saury is high in fat and has a definite fishy taste but in a yummy way. Koreans love having it fresh and canned and also raw as Hoe (sashimi).
